Tasting notes
Made from Barbera grapes, vinified and bottled on the estate. It has an intense ruby red color. This pleasantly sparkling wine derives its effervescence from natural fermentation in the bottle. It is typically bottled young. In the Bolognese tradition, it is often served with cured meats, but it also pairs well with mixed boiled meats.
Try it with some good fried crescentine!
We recommend serving it at a temperature of about 13°C.
* Pumping over is a natural process used to enhance the maceration of wines. During fermentation, the wine is drawn from the bottom of the barrel and poured back into the top section where the grape skins are located. In this way, as the grape skins come into contact with the wine, they release tannins, imparting greater structure and color. This process is repeated three times a day, every eight hours.
