Tasting notes
Product of Barbera grapes, vinified and bottled on the estate. Intense ruby red colour. It is a pleasantly fizzy wine, with fizz achieved through natural fermentation in the bottle. It is a wine that is typically bottled young. In Bolognese tradition, it is often served with cured meats, but it is also recommended with mixed boiled meats.
Definitely try it with some good fried crescentine!
It is recommended to taste it at a temperature of around 13°C.
Remontage is a natural process useful for improving wine maceration. During the fermentation period, the wine is drawn off from the bottom of the vat and poured over the top, where the skins lie. This way, the grape skins, bathed in the wine, release tannins, giving the wine more structure and colour. This procedure is repeated three times a day, every eight hours.
