Tasting Notes This is a structured and particularly full-bodied wine with a bold character; it is round and smooth on the palate, with delicate tannins derived from the crushing and pumping-over* processes. The aroma is persistent, with hints of undergrowth and subtle grassy notes. It has a characteristic ruby red color. It pairs well with hearty meats and roasts.
Try pairing it with Parmigiano Reggiano aged for at least 24 months!

* Pumping over is a natural process used to enhance the maceration of wines. During fermentation, the wine is drawn from the bottom of the barrel and poured back into the top section where the grape skins are located. In this way, as the grape skins come into contact with the wine, they release tannins, imparting greater structure and color. This process is repeated three times a day, every eight hours.
